DaNcInG




Keira had her first dance recital over the weekend...talk about a proud mama! She did GREAT and LOVED being on stage. Daddy may not have been there to see her dancing debut but she was blessed enough to have Nene, Papa, Grandma, Grandpa, Auntie Bekah, Auntie Coley, Uncle A, Trevor, Tallon, Wesley, Auntie Tara, "Auntie Tara's Chris," Pam, and Harris. Talk about feeling loved! Thank you all so much for coming it meant ALOT to little miss K!

Start of Summer



A couple events this week which indicate summer is in full swing for us:



-Today our girl had her last day and graduation ceremony from the 3yr old program at her preschool. Her summer break begins, along with mommy racking her brain with activities to keep her little mind and body busy!


-Logan prefers to not wear pants and continually takes them off whenever I put them back on, that may just be a boy thing though.



- The arrival of LOTS of family, for a reunion down by the beach! :)



-John is gone to fight fires in Texas, with no idea of when he's coming home (hopefully within 2 weeks or so). However, with the fire season expected to be a busy one, he will most likely be off doing what he loves best (besides hanging out with his awesome family :))...fighting fire. I truly miss my husband but am proud of what he does and am anxiously awaiting for him to get back (as are his two little mini-me's). We are very blessed to have a great support system and surrounded by loving friends and family. Please send out some prayers for a safe season!

I got TOLD...

by my 4yr old, Keira. We've been working on cleaning and the organizing concept, particularly in their toy room and individual rooms. We've been making sure everything has a 'home' and gets put back into it's 'home' once we are done using it.

Keira: (as she picks up the aluminum foil I placed on the couch for just a minute, while watching a story on the news) "Uh, Mom is that where this goes?"
Me: (knowing where this is going) "Nope."
Keira:"Is this it's home mommy?"
Me: "No, it's not Keira."
Keira: (still holding the container of foil, hands it to me) "Then put it away please."

Good to know the concept is sinking in, right?!?! ;)

Lentil Tacos

In an effort to cook healthier and cheaper, I came across a recipe, tweaked it a bit, and here's what I came up with. Not only is it healthy and cheap, it's easy too!!!!

1/2lb dry lentils, picked clean of stones and floaters ( I usually throw a little bit more in)
2 cups fat free low sodium chicken broth
1 envelope taco seasoning
1 cup salsa

Place lentils, chicken broth, and taco seasoning in slow cooker. Cover and cook on Low for 3-6 hrs depending on the texture you want. Keep an eye on it and add a bit of water if needed and stir. Add salsa the last 30 min of cooking time.

Fill tacos with lentils and whatever toppings you usually use for tacos :)
