Lentil Tacos

In an effort to cook healthier and cheaper, I came across a recipe, tweaked it a bit, and here's what I came up with. Not only is it healthy and cheap, it's easy too!!!!

1/2lb dry lentils, picked clean of stones and floaters ( I usually throw a little bit more in)
2 cups fat free low sodium chicken broth
1 envelope taco seasoning
1 cup salsa

Place lentils, chicken broth, and taco seasoning in slow cooker. Cover and cook on Low for 3-6 hrs depending on the texture you want. Keep an eye on it and add a bit of water if needed and stir. Add salsa the last 30 min of cooking time.

Fill tacos with lentils and whatever toppings you usually use for tacos :)
